That quote is from a conversation with my 29 year old son last week. Both my kids were college students 7 years ago when I did a complete overhaul of my diet and eliminated processed foods, dairy, grains and sugar. They thought I was nuts and for many years made fun of my choices – especially at family gatherings where I always brought my own food and avoided what everyone else was eating.
Two years ago, Erin was having stomach issues and began experimenting with different things to find out the cause of those issues. After eliminating both dairy and grains and slowly introducing them back one at a time, she realized she was sensitive to grains. That change to her diet alone made her stomach issues go away and resulted in a weight loss of 20 pounds.
About a year ago, Brian saw a picture of himself from a friend’s wedding that prompted him to make some changes. Reluctantly he cut out grains and most processed foods and started adding more vegetables and variety to his diet.
Now instead of making fun of my food, I get calls and texts looking for ideas and recipes!
I am proud that they have adopted healthier food choices and see it make a difference in their lives.
